As referenced in my chocolate chip cookies post, ground chia seed can be used as a vegan alternative to eggs when baking!
I love this idea because (a) it’s animal-free, and (b) you don’t have to keep eggs on hand (or pay the expensive price for them – high quality eggs are pricey!) If you are a single person, like myself, you might not need a dozen eggs sitting around (as you might not use them quickly enough).
The recipe for your vegan egg replacer?
Mix 1 Tbs. ground chia seed with 3 Tbs. water.
Allow to congeal for a few minutes.
You then have a “vegan egg” that can be used in baking in lieu of animal eggs.
I have found I like the flavor and consistency of the final baked product with “chia seed eggs” just as good as when I’ve used regular eggs!
